Lilo, a high-end tasting menu restaurant, opened its doors on April 17 in Carlsbad, San Diego, adding a new dimension to the region’s fine dining scene. Created by renowned chefs Eric Bost and John Resnick, Lilo offers a 12-course dining experience with a focus on coastal flavors and seasonal ingredients. The intimate 22-seat space, designed with a communal dining style, invites guests to experience innovative dishes like dry-aged kinmedai with yuzu gelee and 40-day-aged rib-eye with braised kombu. Drawing inspiration from Japanese cuisine and French fine dining, the meal is presented with artistry, allowing guests to enjoy California’s rich culinary heritage in an upscale setting. The restaurant’s design reflects a modern, seaside aesthetic, complete with oak and stone surfaces and wave-like elements throughout the space.
The intimate yet vibrant atmosphere encourages interaction between diners, chefs, and staff, making it feel like a shared experience. Wine director Savannah Riedler offers a curated selection of wines from lesser-known California regions, while the cocktail menu highlights vintage spirits, adding a unique touch to the evening. Resnick commented, “We think it’s going to be something unique and special to Carlsbad and Southern California.” Lilo’s innovative service model ensures equitable pay for all staff, fostering a positive and sustainable working environment.
