L’Escargot Bleu, a traditional French bistro located on Broughton Street in Edinburgh, has served classic French cuisine since 2009. Founded by chef Fred Berkmiller from the Loire Valley and his wife Betty, who also serves as maître d’, the restaurant embraces authenticity, from its French-speaking staff to its vintage interiors and chalked prix fixe menus. Known for hearty dishes like grilled snails, hake brandade, and beef bourguignon, the prix fixe offering includes three courses for approximately $85. Berkmiller’s steak tartare is a signature, though not always available with preferred ingredients. Guests are drawn to the charm and consistency of the restaurant’s atmosphere, which reflects what one reviewer called “the hallmarks of classic French bistro dining.”
Beyond its menu, L’Escargot Bleu also champions sustainability. It was the first restaurant in the UK certified by Pasture for Life, sourcing only 100% pasture-fed meat. It operates its own garden, Monkton, on Edinburgh’s outskirts, where Fred grows vegetables, herbs, and flowers. All food waste is composted, contributing to its aim of full self-sufficiency. “I’m pleased to see our continued ability to decouple our business growth from our carbon footprint,” said CEO Poul Weihrauch, “while simultaneously investing in innovation and getting behind start-ups that will be creating new solutions.”
