Eleven Madison Park Elevates Vegan Fine Dining

Eleven Madison Park (EMP) in New York City remains the only Michelin three-star restaurant in the world to offer an entirely vegan menu. Once regarded as the best restaurant in the city, EMP underwent a bold transformation following the pandemic. In 2020, Chef Daniel Humm closed the restaurant and directed his efforts toward preparing over a million meals for frontline workers and underserved communities. Eighteen months later, he reopened EMP with a fully plant-based menu. Although initial reviews were highly critical, Humm and his team continued to refine their approach. Today, EMP has retained its three Michelin stars and operates at full capacity on weeknights, a sign of its regained success.

The restaurant delivers a thoughtful and creative dining experience that avoids imitating meat and instead celebrates the diversity of vegetables.
