Blu Restaurant Debuts at Sandblu Santorini with Caldera Views

Sandblu in Santorini, Greece, has opened Blu, a new 150-seat destination restaurant, for its first full season, extending the resort’s offerings with a prime location on the island’s iconic Caldera terrace. Blu combines Greek Mediterranean cuisine with an all-day dining concept. Designed by the acclaimed Rockwell Group, the restaurant features a white marble terrace with sweeping views, airy interiors that complement Santorini’s volcanic landscape, and spaces enhanced by an open-air bar, reflection pool, and resident DJ. The setting provides both a relaxed and vibrant atmosphere, making it ideal for dining as well as private events.

Blu’s menus highlight fresh, locally sourced ingredients with both Greek and international influences. Guests can enjoy dishes such as lobster pasta with sweet wine of Samos, shredded oxtail with paccheri pasta and truffle, as well as traditional Greek salads and freshly caught seafood. Brunch offerings include egg dishes, pastries, and healthy bowls, complemented by decadent desserts. The restaurant also features an extensive wine list with Santorini and Greek vintages, alongside a beverage program of spirits, juices, and signature cocktails.
