San Jose Del Cabo Series: Savor the Shoreline at Nidito Beach and Poolside Bar, An Afternoon of Baja Flavors

Lodge + Dine announces a 4.5-star rating for Nidito Beach and Poolside Bar after a day’s visit evaluating the guest experience. The restaurant’s picturesque beachfront ambiance, elevated Baja-inspired cuisine, and unique craft cocktail menu made it stand out as a resort highlight.

Tucked into the luxurious Viceroy Los Cabos, Nidito Beach and Poolside Bar offers a chic, beachfront escape that effortlessly blends relaxed elegance with vibrant local flavors. With a sweeping view of the Sea of Cortez and a lattice-woven nest-like canopy that filters sunlight into intricate shadows, this spot captures the aesthetic soul of coastal Mexico.

An extension of the renowned restaurant Nido, Nidito is more than just a bar—it’s an experience. This lively offshoot serves up signature mezcal cocktails, refreshing agua frescas, and chef-curated bites right to your chaise lounge or shaded poolside table. Whether sunbathing on the golden sands or lounging by the elegant ellipse-shaped pool, guests are never far from a handcrafted drink or mouth-watering snack.

The design is a visual feast in itself. Wooden floors lead to intimate dining spaces sheltered under a tunnel of woven branches, where shadows dance playfully across white tablecloths and ocean light flickers through the walls. It's airy, immersive, and designed to make you feel simultaneously grounded and transported.

The menu is a celebration of Mexican and East Asian flavors, best showcased through a selection of standout starters. The Traditional Guacamole arrives creamy and fresh, its panela cheese and pico de gallo adding salty brightness, perfectly scooped up with warm tortilla chips. The Catch of the Day Ceviche, bathed in Peruvian peanut “tiger milk” and soy-ginger notes, is a balanced medley of sweet, sour, and savory over crisp jicama and cucumber. A refreshing Cobb Salad rounds out the appetizers—creamy avocado and blue cheese meld with sweet corn and salty bacon for a satisfying crunch.

For mains, the Vegetarian Fajitas offer melty mozzarella and seasoned black beans wrapped in warm flour tortillas—hearty, simple, and satisfying. But it’s the Asada Taco that steals the show: beef topped with a crispy cheese crust and zingy criolla sauce, served with a side of earthy charros beans. The flavors are bold, rich, and unapologetically authentic.

The Buffalo Wings, though flavorful with a tangy-spicy glaze that hits all the right notes, fall slightly short due to the quality of meat—enjoyable, but not the bar’s strongest offering.

Dessert here is far from an afterthought. The Churros, gluten-free and crisp, come with silky caramel sauce and a scoop of velvety vanilla ice cream—warm and cold, soft and crunchy. Meanwhile, the Mezcal Cheesecake with citrus jam and orange sorbet is unexpectedly complex, its smoky undertone a delightful surprise against the brightness of the fruit.

Of course, no visit is complete without sampling the bar’s most celebrated drinks. The margaritas here deserve their reputation—each one bursts with unique, unexpected flavors. The bar’s extensive mezcal offerings are complemented by a curated wine list; we especially recommend the Casa Madero 3V for a bold red or Monte Xanic Chenin Colombard for something light and refreshing.

This is the kind of place you linger in. You order another cocktail, dip your toes in the sand, and let the soundtrack of the waves and music carry the afternoon. Nidito Los Cabos Bar doesn’t just serve food and drinks—it serves a feeling. One that sticks with you long after the mezcal fades.
